A manuscript leather parchment, written in latin in 1456, proves that at that time the Burc family was already the owner of land around Cahors. All this is confimed by deeds of vineyards from 1663 and 1838. Since then, generations of wine makers have followed on this predestined land.
Nowadays, the 5th and 6th generations work together. Anne & Emmanuelle have decided to give their support, their help and their knowledge to this family venture. An addition from the 6th generation that will better the production and the wine making. We are thrilled because we believe it will help getting even better results.
Located in the south of the Capian village, 35km from Bordeaux, Château Suau enjoys unique characteristics. The 82-hectare estate encircles the Château of which 66 are planted to vine. Since 2014, renowned oenologist Michel Rolland is the winery’s consultant.
The vineyards are planted at a high density (5000 to 7000 feet/Ha.) The current plantings are – white varietals: 65% Sauvignon Blanc, 35% Semillon and red varietals: 59% Merlot, 37% Cabernet Sauvignon, 4% Cabernet Franc
Since vintage 2014, all Château Suau wines are certified organic by Ecocert.

Chevalier Torpez, patron saint and protector of Saint-Tropez, was a brilliant army officer at the time of the Roman emperor, Nero.

Chime is about finding the perfect combination of a dedicated grape grower, an appropriate cultivar and an artisan winemaker to deliver consumers the best possible wine nature will allow. Sometimes our relentless focus on Place, Grapes and People means that we don’t make the best short term business decisions. We might bottle up a Dry Creek Cabernet as Sonoma Valley, for instance, or a Lodi Cabernet as California. We can live with this reality if it means that we are fulfilling our broader mission of delivering the best possible wine nature will allow.
Handcrafting of fine wines is an art form. Each year the grapes provide a unique challenge that requires new solutions to bring the wine to its greatest potential. Our winemaker, Daniel Benton, takes great care to let the vineyards express themselves in the wines. Grapes are gently crushed and stemmed, leaving many whole berries. Fermentation is slow and cool to enhance the fruit flavors. The grapes are always handled gently to avoid extraction of harsh tannins. Wine is aged in French oak barrels from Never, chose to compliment the special characteristics of Cabernet Sauvignon grapes. These methods create a Bordeaux style wine that is ready to drink at release but will continue to improve for years to come.

Beginning with nothing but a family recipe for raisin vodka and a primitive pot still that he built himself in his family’s farmhouse, DASH’s founder and Master Distiller, Ali Ansari spent more than a year meeting with master distillers throughout Europe and experimenting with different fermentation and distillation methods to perfect the recipe for DASH. Upon doing so, Ansari returned to Texas to pursue his dream of producing his ultra-premium vodka. He formed Limited Spirits, LLC (“Company”), and secured the federal and state permits necessary to operate a distillery; he designed DASH’s bottle, label, and packaging; and he located and purchased a land in Brookshire, Texas on which he designed and built the Company’s state-of-the-art distillery featuring, among other things, a custom-designed copper pot still handcrafted in Scotland, and a fully automated high-speed bottling line.
Today, Ansari oversees the entire production process of DASH from fermentation through distillation and bottling, and DASH is produced from start to finish in the Company’s Brookshire distillery.
Embracing today’s craft distillation movement, Ansari offers his vodka as an innovative artesian alternative to the multi-national giants that currently dominate the liquor industry for premium spirits. It appeals to culinarians who are curious about its mysterious eastern origins, to mixologists eager to add a unique new offering and to consumers who increasingly want to be able to trace the pedigree of the brands they support.
